Healthy Recipe #1 : Beet and Arugola Salad

This is a fantastic salad that is delicious and very good for you. 

> Remove the greens and broil your beets in the oven, larger beets take about an hour.
> Wash and cut arugola
> Once soft, take out beets and remove the skin (careful, they are probably very hot, let them cool down for a few minutes)
> Cut beets into bite size chunks
> Combine arugolan and beets in a bowl and dress salad with Balsamic Vinegar or very tiny amounts of Rice Vinegar and Sesame Seed Oil
> Serve!

* One cup of beets had 58 calories.
* Beets are chock-full of two different antioxidants that help protect healthy cells against damage all over the body.
* The folic acid in beets also helps kids' cells growing and functioning the way they should.
* Beets are good for heart health and for keeping kids' blood pressure regulated, because they provide a nice amount of potassium.
